Nothing represents the spirit of hospitality better than the experience of cooking, serving, and sharing a live fire feast: a chance to get together with a handful of friends and dig a hole in the ground. We roll up our sleeves, prepare for a day-long process, and serve a crowd-pleasing feast of lamb tacos, Mexican barbacoa, and around here people really anticipate and annual invitation to the best crawfish boils. We can also bring the over the top wow factor with the pig roast in the style of Louisiana cochon de lait, or suckling pig roasted upright over a fire. It sure is an entertaining blow-out! The anticipation as the feast builds makes the crowd begin to circle the wagon. It’s all about a pile of food in the middle of the table, eating with your fingers. Getting everyone to stand or sit around a table outdoors makes people interact and it’s a fun family event. The spirit of the gathering drives the enjoyment of the meal.
